Skinni Meringue Cookies
I am super excited about this recipe! This is a super light
meringue cookie that tastes like heaven! It is a great little cookie that could
be made for a girly get together (baby showers, wedding showers, girls nights)
that you don’t have to feel guilty about. It is very important when making this
recipe to use REAL egg whites. Trust me, I have stubbornly tried using the egg
whites in a box (even though it says on the box that it won’t make a meringue)
and they don’t make a correct meringue, it comes out runny.
Ingredients
1.
3 egg whites
2.
1/8 teaspoon Cream of Tarter
3.
½ teaspoon Vanilla
4.
¾ cups of splenda
5.
Choose One or Neither: 1 teaspoon chocolate
powder or ½ teaspoon Cinnamon
Directions
1.
Preheat Oven to 300.
2.
Mix your 3 egg whites, Cream of Tarter, and
Vanilla with a hand mixer on high, until a frothy mixture has formed.
3.
Gradually add in your splenda, while mixing at a
high speed. I usually do ¼ cup at a time.
4.
Leave the meringue as is for a vanilla cookie,
or add in your cinnamon or chocolate powder (whichever flavor you prefer).
5.
Drop meringue onto a parchment paper lined pan.
It will make about 30 cookies using a ½ tablespoon.
6.
Cook for 15 minutes. I usually will set the
timer for 10 minutes and flip the pan around for the last 5 minutes, so that
the cookies get evenly browned.
7.
Enjoy your cookies! If you have any leftover,
then store them in a Tupperware container (usually not an issue for me)!

*According to my math, there are about 123 calories for the
whole pan of cookies (138 for the chocolate), so if you get carried away with
your munching (like I normally do), then it’s not that big of a deal! Plus
these are high in protein and low in carbs, which is hard to find in a
cookie!!!!!
