What is more fun than a little crinkle in your carrots? I cook these crinkle carrots almost every week! These carrots make a great side dish to almost any main dish you cook in the kitchen (chicken, beef, pork, or fish). Easy to prepare, cook, and clean make these carrots a staple in my kitchen, and should in your kitchen as well. Get Excited!

Ingredients
1.       2 bags of frozen crinkle cut carrots
2.       Spray Olive Oil- I have a Misto olive oil sprayer
3.       Pepper
4.       Sea Salt
5.       Fennel Seed

Directions
1.       Pre-heat the oven to 400.
2.       Line pan with foil and spray with non-stick spray.
3.       Spread 2 bags of frozen crinkle cut carrots on pan.
4.       Spray carrots with olive oil.
5.       Sprinkle with sea salt, pepper, fennel seed.
6.       Cook for 35 minutes. At about 20 minutes you might want to turn the pan around and mix the carrots.
7.       Enjoy these crowd pleasing carrots!


*I always cook 2 bags, because the carrots make great leftovers when heated in microwave.
*The fennel seeds take this side from a fun basic dish to the next exciting level!

When it comes to cooking during the week, I like it to be as simple and healthy as possible. My easy chicken dinner is as effortless as it comes in preparation and clean-up. Not only is it easy, but it tastes wonderful! The main part of the dish is chicken, so that’s what I will begin with. Check back later in the week for the sides of carrots, asparagus, and green beans!

Ingredients
1.       1-2 pounds of chicken breast
2.       ½ cup BBQ sauce (I try to get a lower calorie BBQ sauce and this week its Williamson Bros. BBQ)
3.       Pepper

Directions
1.       Pre-heat the oven to 350.
2.       Line glass baking dish with foil and spray with non-stick spray.
3.       Place chicken in dish and pour ¼ cup BBQ sauce on top of chicken and add a sprinkle of pepper.
4.       Cook chicken for 15 minutes.
5.       Pull the chicken out of the oven and flip the chicken over. Add the remainder of the BBQ sauce and sprinkle some more pepper on top.
6.       Cook chicken for an additional 20 minutes.
7.       Use any leftover BBQ sauce for dipping! Enjoy!





     By using the foil, there is barely any clean-up!

Skinni Peanut Butter (PB2) and Chocolate Crunch Cookies

These easy no bake cookies are packed with flavor and crunch!

Ingredients
1.       2 tablespoons PB2 peanut butter (powder)
2.       1/2 tablespoons cocoa powder
3.       1 tablespoon Splenda
4.       ¼  teaspoon vanilla
5.       1 tablespoons skim milk
6.       ¼ cup Fiber One Cereal

Directions
1.       Mix the dry ingredients (peanut butter, cocoa powder, and Splenda).
2.       Add in the vanilla and milk to create the peanut butter and chocolate mixture.
3.       Mix in the Fiber One Cereal.
4.       Using a tablespoon sized scoop, form cookies into little balls and place on plate. This recipe will make about 4 cookies. According to my math, these cookies are about 22 calories each (85 for the entire recipe).
5.       Place in the refrigerator to help the cookies set.
6.       Enjoy these Crunchers and store any extra in an air tight container! 

*These cookies are crunchiest when you first make them. If you wait until the next day, the cereal tends to get soggy.
