Skinni S’more Fudge
This is a light and tasty piece of fudge that will remind you of sitting around a campfire!
Ingredients
1.       1  12-ounce bag of semisweet chocolate chips
2.       1  12-ounce can of fat-free sweetened condensed milk
3.       2 teaspoons of vanilla extract
4.       2 reduced-fat graham crackers
5.       2  2/3 cups of mini-marshmallows
Directions
1.       Melt the chocolate chips and fat-free sweetened condensed milk in a saucepan over low heat, stir until mixture is smooth. (Make sure to keep an eye on it, or else it will burn).
2.       Remove from the stove and stir in the vanilla.
3.       Break graham crackers into small bite size pieces and add to chocolate mix.
4.       Fold in the marshmallows. They should not melt completely and should hold their shape.
5.       Place the mixture into a 9x13 pan that is lined with foil (pre-sprayed with non-stick cooking spray).
6.       Place in the refrigerator or freezer until firm. (I usually put it in the freezer because I can be a little impatient).
7.       Lift the fudge out of the pan and place onto a cutting board to cut into pieces.
8.       Enjoy your treats!

*If you cut the fudge into 128 pieces, then it comes out to roughly 25 calories per piece. This is 15 cuts along the short side and 7 cuts along the short side. I start in the middle and work my way out.
