Skinni Taco Soup

Skinni Taco Soup

Here is another super easy Crock-Pot recipe! This dish is almost like a chili, but taco inspired! Because its similar to a chili, it tastes great for leftovers!

Ingredients
1.       2 lbs. ground beef or turkey (cooked)
2.       2 cans of light kidney beans (rinsed and drained)
3.       2 cans of low sodium black beans (rinsed and drained)
4.       4 can of green beans (rinsed and drained)
5.       2 cans of stewed tomatoes
6.       1 can of whole corn (drained)
7.       1 can Rotelle tomatoes (mild)
8.       2 cans of 8 oz. tomato sauce
9.       1 package dry ranch dressing
10.   1 envelope of low sodium taco seasoning
11.   1 bag of frozen chopped onions

Directions
1.       Brown meat in skillet until cooked fully.
2.       Drain the meat.
3.       Place all of the ingredients into the Crock-Pot (don’t forget the liner). Cook on low for 4-6 hours. The longer it can cook on low, the better the dish will come out. Make sure to mix the soup occasionally.
4.       Serve and Enjoy!

*I like to put Taco Bell hot sauce on top to give it a little more heat. My husband prefers to add shredded cheese to his!
**If you don’t want it to be such a heavy dish, make a Mexican inspired side salad. I suggest shredded lettuce with salsa as a dressing. Pin It Now!

  1. I will do this after the weekend, it is a super easy shcool night supper. We love taco’s in this house and the taco inspired soup sounds just up my alley

  2. Awesome! Please let me know how it turns out. If there is room in the pot, I will add extra stewed tomatoes. I have also done this in a large pot on my stove instead of the Crock Pot. If doing that, then just bring to a boil and allow to simmer as long as you can!
